Last night I didn’t feel like cooking and it was getting late so Hubby suggested leftovers. I usually like leftovers. I don’t mind pizza from the night before, a day old casserole, or soup from a couple of nights ago. But we didn’t have any of those. The night before last my hubby made us homemade french fries and homemade waffles for dinner (I don’t know if I’m more impressed that he made two homemade dishes at once, or disturbed by the fact that he made waffles and french fries together for the same meal). But since day old french fries and day old waffles don’t really appeal to me much, I made myself a pepperoni omelet (don’t ask me where I got that idea). It turned out more as an egg pizza because there was so much cheese that it wouldn’t fold over. So yes, it WAS delicious. Hubby made J-Dog “egg noodle soup” (ramen with egg) and it just keeps going downhill from there with the girls both eating those day-old waffles. J-Dub ate nothing until it was almost time for bed when he decided he was hungry after all and wanted, guess what? A waffle. Dad had a PB&J sandwich (whaaaa?) and…wait for it…a waffle (What is it with these people?). I’ve realized that as the mother of the home I need to take charge to feed my family quality food. So I’ve resolved that to make up for last night’s deplorable dinner, today I’m going to make something really gourmet and fancy, like spaghetti.
